Healthy Pumpkin Chocolate Chip Muffins - GF and Paleo Friendly


This week my love and I woke up craving something delicious and pumpkin-ey so I decided to try out a recipe in my mind. I combined my two favorites - pumpkin and chocolate - to create something delicious and healthy.

And... it was a huge success! Both of us loved them and how nourishing they were. Especially when they were warm, the gooey chocolate was beyond words.

I'm also all about simple, easy recipes that only require one mixing bowl and minimal ingredients. This muffin recipe is the epitome of that!

If you've been looking for a healthy version of pumpkin chocolate chip muffins, I've got you! This recipe makes 12 muffins.

 

Healthy Pumpkin Chocolate Chip Muffins

You'll need:

-5 eggs

-1/2 cup coconut flour

-3 tbsp melted coconut oil

-1/4 cup pumpkin puree

-1/2 tsp apple cider vinegar

-1/2 tsp baking soda

1/4 tsp baking powder

-1 tbsp pumpkin pie spice

-dash of salt

-2 tbsp coconut sugar

-chocolate chips (as much as you want!)

How to make this nourishing muffins:

-Preheat oven to 400 degrees

-Mix all wet ingredients together in a large bowl

-Add in dry ingredients and stir well

-Add mixture to a muffin pan

-Bake at 400 degrees for 12 to 15 minutes
