How to Make Keto-Friendly Homemade Granola


Recently I began craving granola but I didn't want to go and buy the kinds at the store. Most packaged granola is full of sugar as well as refined carbohydrates. But sometimes in life you need some delicious, nourishing granola to go over some yogurt or an acai bowl.

Whether you're simply looking for a low carb granola recipe or if you're on the ketogenic diet, this homemade granola is for you!

How to make low carb kets-friendly granola ~

You'll need:

-1.5 cups of walnuts

-1 cup of almonds

-1 egg (can substitute a flax egg if desired)

-1/2 cup of coconut oil

-3 tbsp raw unsalted pumpkin seeds

-3 tbsp raw unsalted sunflower seeds

-3 tbsp cacao nibs

-2 tbsp cacao powder

-1 tbsp cinnamon powder

-1 good sprinkle of pink Himalayan salt

I always recommend using organic ingredients

How to make it:

-In a large bowl mix together all nuts and seeds. Add in cacao nibs, cacao powder, cinnamon and sea salt

-Turn on oven to 250 degrees F

-In a large baking pan add in 1/2 cup of melted coconut oil

-Add 1 egg to bowl of nuts and seeds and mix well

-Pour the mixture into the baking pan

-Bake at 250 for approximately 40 minutes or until granola is crunchy

-Enjoy!

When I put this granola over my smoothie bowls or yogurt, I like to drizzle it with a bit of raw honey. You could add coconut sugar, xylitol or honey to the granola before baking it if you'd like something sweeter!
