Delicious Raw Vegan Key Lime Pie Recipe ~ GF and Refined Sugar Free

Indulgent but simple to make, this beautiful and fresh dessert features some healthy fats, potassium, magnesium, niacin, folate and vitamins C, E and K (and that’s just a partial list!)

You'll Need~


  • 1 cup each of two different kinds of raw, unsalted nuts (almonds, pecans, macadamia nuts, hazlenuts, cashews)

  • 8 dates, pitted (if they’re too hard, you can soak them in some boiled water to revive them)

  • 1/2 tsp vanilla extract

  • pinch of salt


  • 3/4 cup lime juice (key lime is ideal but regular is fine)

  • 1/2 cup agave or maple syrup

  • 1/4 cup coconut milk

  • 1 cup avocado- roughly two avocados

  • 1/3 cup coconut oil

  • 2 tsp vanilla extract

  • pinch of salt

Mixed Berry Reduction (optional, to garnish):

  • 2 cup assorted berries (or one bag frozen mixed berries)

  • 2 Tbsp coconut sugar/maple syrup

  • 3 Tbsp water

Additional Garnishes (optional):

  • Raspberries

  • Mint sprigs

How to make it~

  1. Place dates in food processor and process until they become a paste

  2. Add nuts and remaining crust ingredients and process until crumbly

  3. Press the mixture down into a pie tin/springform pan

  4. Add all filling ingredients to a blender and blend until smooth

  5. Pour filling into pie crust

  6. Place into freezer with saran wrap and freeze for 3 hours. Keep frozen before serving (like an ice cream cake)

  7. Garnish as desired. If making berry reduction: blend berries and water in a blender or with an immersion blender, then transfer to a small saucepan. Bring to a boil, then cook uncovered on medium heat for about twelve minutes, stirring frequently. Stir in coconut sugar, serve hot or cold

She did her stage under Chef Amanda Cohen at Dirt Candy in NYC, went on to own Stay Fresh Veg in Durham, NC, and became recognized as an innovator in the plant-based food world by the time she was 25.
